For New Year's Eve we made Slow-Cooked Carnitas Tacos following this recipe. They were so yummy I thought I'd share. We followed the recipe pretty much verbatim and also made the Roasted Tomatillo Salsa, which is also really tasty. We did substitute corn tortillas for flour tortillas and garnished them with the Tomatillo Salsa, red peppers that were sliced and roasted in the oven for a few minutes, shredded cheese, and these crunchy fried onions that are sold in the vegetable aisle.
