#476...beet it

Guess what is hiding below all that arugula? Roasted beets tossed in balsamic mustard glaze. I made this warm goat cheese, beet and arugula sandwich recipe from epicurious. Instead of using canned beets like the recipe calls for, I roasted some golden beets I had. Roasted beets are really tasty....who knew?

I love roasted beets. I had some for dinner last night...they are also great cold out of the fridge! Saute the beet greens too with onion, garlic and olive oil and then toss the roasted beets back in at the end. Yumm!
